Turkey Spinach Burgers

Equipment

  • 1 Large Skillet
  • 1 Medium Bowl
  • 1 Citrus Zester -- microplane will also work

Ingredients

Turkey Burger

  • 2 cups Spinach Leaves -- thick stems removed, chopped
  • 1 cup Cilantro Leaves -- stems removed, chopped
  • 3 cloves Garlic -- minced
  • 1 Lemon -- zested and then chopped
  • 1 lb Ground Turkey
  • 2 tsp Sriracha Sauce
  • 1 tbsp Kosher Salt -- to taste
  • 1 tbsp Fresh Ground Black Pepper -- to taste
  • 1 tbsp Olive Oil
  • 1 package Potato Buns -- lightly toasted
  • 1 tbsp Ground Coriander
  • 1 tbsp Ground Cumin

Condiments

  • 1 container Lemon-Garlic Aioli
  • 1 container Mustard -- Dijon is preferred
  • 1 container Banana Peppers
  • 1 Red Onion -- thinly sliced

Instructions

  • Heat skillet with olive oil in a large skillet on medium-high heat.
  • Combine spinach, cilantro, lemon zest, garlic, turkey, cumin, coriander, and sriracha in a medium bowl. Season with salt and pepper. Gently mix.
  • Take a grape sized sized portion of the mixture and cook on both sides. Taste and correct seasoning as needed.
  • Form into 4 burgers
  • Cook burgers until golden brown about 3 to 5 minutes on each side. Do not press down on the burgers. Cook until 165F.
  • Let rest 5 minutes before plating.
  • Serve with toasted buns, aioli, mustard, peppers, and onions.
