Instructions
Heat skillet with olive oil in a large skillet on medium-high heat.
Combine spinach, cilantro, lemon zest, garlic, turkey, cumin, coriander, and sriracha in a medium bowl. Season with salt and pepper. Gently mix.
Take a grape sized sized portion of the mixture and cook on both sides. Taste and correct seasoning as needed.
Form into 4 burgers
Cook burgers until golden brown about 3 to 5 minutes on each side. Do not press down on the burgers. Cook until 165F.
Let rest 5 minutes before plating.
Serve with toasted buns, aioli, mustard, peppers, and onions.
